I would have to go with either Led Zeppelin's cover of Boogie with Stu or possibly Poison's "She's my Cherry Pie" covered from warrant.

Red Hot Chili Peppers did a cover of Bob Dylan's Subterranean Homesick Blues-- it's really good. Also, the soundtrack to the movie "I Am Sam" is a group of contemporary artists doing covers of Beatles songs, and some of them are really great.

Ohh, I just thought of something.. I guess You Raise Me Up is a cover song. *stupid grin*
