No editing will be possible with live OSM data during the maintenance period; the API server will be unable to accept your request or respond to it with data. Third-party Potlatch instances may still load / start, but may stall at Failed to load map . That will limit your ability to use Potlatch and other similar editors. You could prepare off-line training materials for your workshop. Save an .osm file for your area of interest, and work with an off-line editor.
