Because he needed to be told no. He was treating the patient like a lab rat, and it needed to stop.
Then why would she have allowed the first tests to be taken, which were all much more dangerous? She basically said no to a harmless suggestion, but yes to all the risky ones? I understand the need to tell House "no" sometimes, but it seems that she did it at the wrong time.
I guess it's all subjective, depending on how you think about it... :S

To dull the pain, he asked for a chemically-induced coma. While in the coma, Stacy had the rights to decide the next procedure for him, so she asked for the middle-ground one, which involved removing some of the muscle.
