For the first time today, I completed a snow faerie quest. She asked for very cheap items (under 1k for both together) so I bought them and I got a cheap item and around 2k in return. I asked for a second one and she wanted two very expensive thing so I didn't do it, and when I came back in four hours and tried again she wanted four things! Does the number of items required increase each time I fail?

No it doesn't matter at all, neither does in the esophager quests. Sometimes she'll ask for 3 items that all cost above twenty-thirty thousand np.
