I've gotta say there's not a huge spectrum here.
Either fluffy or black? There's more to coffee than this! There's more to life than this!
Personally, I pride myself on my coffee making. I come from a long line of obsessive compulsive coffeeheads. My mother has been known to go through several coffee pots a year. I just use my good ol' french press. Simple.
Rule #1 - the more coffee you use the less bitter it is when drinking it straight. (I have my coffee black when I'm eating a cookie, ie. something sweet).
Rule #2 - mo' hotter, mo' better. Sugar/sweetner goes in first so there's not a puddle of syrup at the bottom. If there's cream involved it should be heated so you don't have a luke warm cup (heck, my mom even heats her cup!).
There isn't much more to that for me and yet I feel like I get a different cup every time. Cappucino is just a frothed milk extra. I'll have an espresso if I'm dying for a good cup of coffee when I'm out somewhere, but I trust my little buddy the french press. Latte is pretty far down on my list because I just don't like the taste of hot milk over whole cream.
Flavors are nice for special times... I'll have an Irish coffee on Christmas morning, or a hazelnut creamer when I'm feeling decadent, but other than that I believe flavor shouldn't rule your coffee (except for the flavor of the coffee itself).
Did you know the roasting process helps determine the final ratio of caffiene in your cup? The more they roast it the less caffiene is in it!
Having said all that, I'll still never turn down a cup of java... even from a thermos in a grocery store!
