Excel would probably work quite well for a map, I believe some people used it. I did mine by hand... excel's probably quicker! Heh.

Mapping your temple is a personal thing... I don't know if it's easy to paste pictures into Excel, but if you're familiar with working with it, then it's a good way! As long as the map is clear to you! (I've made a hand drawn one, with coloring pencils and everything
I just felt like overdoing it 
)
As for the waiting time: when you get caught in a trap, the waiting time is just one hour. You'll only get locked out for 12 hours after reading a scroll in one of the libraries.
