How to get a theme with categories, or make one

I was wondering, does anyone have a tutorial on how to make a shop with categories? Or are they all different shops?

As far as I know, only galleries can have categories. There's currently no way to organize the stock in your actual shop

These groups of categories are called malls. This is when many users each have a shop stocking in a different category, and they all link to each other's shops with a mall banner.
